1 package Melty Cheddar chicken sausage
4 large store-bought biscuits (or homemade)
4 large eggs, cracked into a bowl
4 tablespoons unsalted butter
1 whole avocado, mashed
1 cup arugula
4 tablespoons store-bought chipotle mayo

Cook your sausage: Butterfly each Melty Cheddar sausage by slicing lengthwise without cutting all the way through, then open to flatten. Air-fry at 400 ℉ for 5 minutes, until browned and hot. Let rest for 2–3 minutes.

Prep the biscuits: Split the large flaky biscuits in half and heat in the oven at 350 ℉ for 5–7 minutes, until warmed through.

Fry the eggs: Heat a nonstick pan over medium heat, add a little butter, and fry the eggs to your preferred doneness, aiming for crispy edges.

Assemble your sandwiches: Smear 1/4 of the mashed avocado on the bottom half of each biscuit and season with salt and pepper. Place a sausage link cut-side down over the avocado, then top with a fried egg and a handful (about 1/4 cup) of arugula. Spread 1 tablespoon of chipotle mayo on the top half of each biscuit, then close the sandwich and serve.
