1 package Classic Roasted chicken sausage
1 tablespoon avocado oil
3 pounds new potatoes
1 bunch broccolini
1 clove garlic
1 cup whole milk
0.25 cup minced yellow onions or shallots
1 teaspoon lemon juice
4 tablespoons chicken stock
0.5 stick unsalted butter, plus one tablespoon

Make the mashed potatoes: Add potatoes to a pot of cold water (just enough to cover) and bring to a boil. Reduce to a simmer and cook until fork-tender, about 20 minutes. Drain and return to the hot pot. Let sit for 5 minutes to release steam. Mash the potatoes using a masher or mixer, then add 3 tablespoons butter, 1 cup whole milk, and salt and pepper to taste. Stir until creamy, then set aside.

Steam the broccolini: In a shallow pan, bring ½ cup water to a boil, then reduce to a simmer. Add broccolini, garlic, and 1 tablespoon butter. Cover and steam until bright green and just tender, 4-6 minutes.

Sear the sausage: Heat 1 tablespoon avocado oil in a sauté pan over medium heat. Add the sausage and sear for 3–4 minutes per side, or until nicely browned and heated through. Remove and keep warm.

Make your pan sauce: In the same pan, use the sausage drippings to sauté minced yellow onions or shallots. Add lemon juice and chicken stock, bring to a simmer, and reduce slightly. Stir in the remaining 1 tablespoon of butter to create a silky sauce. Season to taste with salt and black pepper.
