Ingredients
2 tablespoons olive oil
1 large onion, finely chopped
3 ribs celery, finely chopped
2 carrots, peeled and finely chopped
1 Granny Smith apple, diced
4 cloves garlic, minced
2 teaspoons thyme leaves
8 cups chicken broth or water
2 ½ cup dried green lentils
1 package Melty Cheddar Chicken Sausage, sliced or diced
1 tablespoon apple cider vinegar
Kosher salt and freshly ground black pepper, to taste
Chopped parsley and sliced chives, for serving (optional)

Add olive oil to a large Dutch oven or soup pot and heat over medium high. Add the onion, celery, and carrots and saute until tender, about 3 minutes. Season with salt and pepper.

Add the apples, garlic, and thyme to the pot and continue to saute until garlic is fragrant, about 1-2 more minutes.

Add the broth and bring up to a boil, then stir in the lentils and sausage. Lower the heat to a low simmer. Cook, stirring occasionally, until lentils are tender (about 40 minutes).

Season to taste and stir in the apple cider vinegar.
