Ingredients

Corn Relish

1 tablespoon olive oil
1 tablespoon butter
2 ears sweet corn, husked, kernels removed (about 2 cups)
3 scallions, thinly sliced, white and green parts separated
1 small red bell pepper, finely diced
1 large jalapeño, finely diced
3 garlic cloves, minced
1 teaspoon granulated sugar
½ teaspoon kosher salt
½ teaspoon smoked paprika

Sausages

1 package The Sausage Project Melty Cheddar Chicken Sausage
4 hot dog buns
2 tablespoons unsalted butter

Make the relish: Heat a medium sauté pan over medium-high heat. Add the olive oil and butter. Once the butter has melted, add the corn, scallion whites, red bell pepper, and jalapeño. Cook for about 5 minutes, stirring occasionally, until the vegetables are softened and the corn is tender. Add the garlic and cook, stirring, until fragrant, about 1 minute more. Stir in the sugar, salt, and smoked paprika. Add the scallion greens and remove from the heat.

Cook the sausages: Heat a skillet over medium heat or preheat a grill. Cook the Melty Cheddar Chicken Sausages for 6–8 minutes, turning occasionally, until heated through and lightly seared.

Toast the buns: Butter the inside of each bun, then toast in a skillet or on the grill until lightly golden.

Assemble the sausages: Place 1 cooked sausage into each toasted bun. Top with the corn relish and a sprinkle of additional scallion greens, if desired.
