2 tablespoons olive oil
10 ounces Yukon Gold potatoes, washed and cut into ¼–⅓-inch pieces
1 package The Sausage Project Melty Cheddar Chicken Sausages, links left whole
1 red onion, roughly chopped
2 large cloves garlic, finely chopped
½ teaspoon cayenne pepper
½ teaspoon smoked paprika
½ teaspoon garlic powder
½ teaspoon onion powder
¼ teaspoon chili powder (optional)
1 pint cherry tomatoes
1 large bell pepper, roughly chopped into ½-inch pieces
2 teaspoons chopped Italian parsley (leaves only)
Flaky sea salt and freshly ground black pepper, to taste
Hot sauce for serving

Heat the olive oil in a large skillet over medium-high heat. Add the potato pieces and whole sausages and cook for 5–7 minutes, turning occasionally, until both are nicely browned.

Add the onion, garlic, and spices, and season generously with salt and pepper. Continue cooking, stirring and turning regularly, for 3–4 minutes, until fragrant.

Add the tomatoes and bell peppers. Once they begin to sizzle, cover the skillet, reduce the heat to medium, and let everything steam and cook for 3–4 minutes, until the potatoes are fork-tender.

Once the potatoes are cooked through, uncover, taste, and adjust seasoning as needed. Give everything a final toss, then serve topped with fresh parsley and a splash of hot sauce to taste.
