1 pound pizza dough (homemade or store-bought)
1 package The Sausage Project Italian Herb Chicken Sausage, casings removed and hand-crumbled
2 ripe peaches, cut into wedges
8 ounces fresh mozzarella, torn
1 cup baby arugula
4 tablespoons olive oil, divided
Flaky salt
Freshly ground black pepper
Hot honey

Prep the grill: Heat a gas grill to medium-high heat. (If using a charcoal grill, make sure there is a hot side and a cooler side.)

Cook the sausage: Heat 1 tablespoon of olive oil in a skillet on the grill, or a pan on the stovetop. Add the sausage and cook, stirring occasionally, until browned, about 8 minutes.

Grill the peaches: Brush the peaches with 1 tablespoon olive oil and grill for 1–2 minutes per side until lightly charred.

Grill the flatbread: Stretch the pizza dough into a rustic oval about ½-inch thick. Brush each side with about 1 tablespoon olive oil so that it’s well coated.

Place the dough directly on the grill. Cook for 2-3 minutes until grill marks form on the underside. Use a large grill spatula to flip the dough, then turn the grill to the lowest heat setting.

Build the pizza: Top the flatbread with mozzarella, sausage, and peaches. Close the grill lid for 4–6 minutes until the crust is cooked through and the cheese is melted.
