1 package Classic Roasted chicken sausage, sliced into half-inch coins
2 cups white jasmine rice
2 tablespoons neutral vegetable oil (like avocado)
1 whole yellow or red bell pepper, sliced into strips lengthwise, core removed

Instructions
Prep Time: 10 min | Cook Time: 20 min | Servings: 1
1
Prepare your rice: Cook rice according to package directions either in the rice cooker or on the stove as you prep the rest of the meal.
2
Sear the sausage: Heat a sauté pan or wok over medium-high heat. Add a splash of neutral oil and sear the sausage coins until lightly browned on both sides, about 2–3 minutes per side. Remove from the pan and set aside.
3
Stir-fry your vegetables: Add the bell pepper to the pan and cook for 4–5 minutes until softened. Add the zucchini and cook undisturbed for about 5 minutes until golden on both sides. Toss in the snow peas and cook for another 2–3 minutes, stirring frequently.
4
Put it all together: Lower the heat to medium-low. Return the sausage to the pan, add ½ cup teriyaki sauce, and toss everything together until evenly coated and heated through. Top with toasted sesame seeds and serve over steamed rice.
